JJ was talking about green tomatoes on Facebook, which got me thinking of fried green tomatoes, which made me very hungry. I had these tomatoes on the counter, red but still too hard to use so I made fried red tomatoes. The recipe for these was very simple: sliced tomatoes, dipped in seasoned flour then in egg beaten with a little ranch dressing, then dredge them in Panko breadcrumbs. Fry both sides in a little olive oil, drain on paper towels and enjoy! Light, crispy and delicious!
